Journeyman RestaurantChef Tim Pratt has produced an innovative A La Carte menu comprising twelve standard dishes with six vegetarian options.

All eighteen are available as entrée size and ten are also available as main size dishes.

Those who prefer a light lunch may choose a couple of the entrée size dishes or perhaps an entrée and a dessert.

Those wishing to have a substantial three-course dinner may choose an entrée, main course and dessert. A salad of mixed leaves is provided with main course dishes.

For 'foodies' looking for a complete gourmet experiance, Tim has produced a seven course Degustation menu and his wife Deb, a qualified sommelier and wine judge, has matched seven wines to those dishes.

A customer's email described it as "seven beautifully crafted dishes, two mid courses, and the most perfectly balanced wines I've had for some time." He finished his note with "Thank you for the best dining experience of the year."

For those wishing to have a nibble and a drink or two in the lounge bar, Tim has produced a Bar Menu with a touch of magic.

If you're having a cocktail and you think sashimi might go well with that, it's there on the bar menu.

An oyster or two with your champagne, a corn and bacon fritter with your beer, a beef patty with your glass of red wine, some Atlantic salmon with your glass of white, or a dessert with your coffee; all this and more is served in the lounge bar.

The menus evolve as the seasons change and fresh produce becomes available.

The Journeyman is not your average Highlands restaurant, and the flavours presented in these menus won't be found in the average restaurant menu.

Interesting herb and spice blends such as chermoula and gremolata will tempt your taste buds. Exotic ingredients like serrano jamon - ham from Spain finely sliced, and jicama - the Mexican root vegetable, have unique flavours and textures. Sauces such as truffle-infused perigeaux add that special touch.
